Rich Fruit Cake For Father's Day

As both dh and fil do not like cakes with cream so I baked them a fruit cake instead.

Heart-shaped Fruit Cake


with simple ribbons decor

Ingredients:-

(A)Fruit Mixture:
400g mixed sultanas,currants and golden raisins
150g mixed peel
*Soak in brandy (I soaked for a month):

(B)grated skin of one lemon & one orange

(C)Butter Mixture:
250g butter
250g sugar
4 eggs

(D)Flour Mixture:
350g plain flour
1 tsp baking powder
a pinch of salt
*sift all together


Method:-
1)Melt (C)butter and sugar in a pot till dissolve. Mix in eggs, one at a time when butter mixture is slightly cool.

2)Add in(D)flour mixture to the butter mixture, a little at a time and mix well.

3)Mix in (A)fruit mixture &(B)grated skin of lemon and orange to the batter.

4)Lined the cake pan and pour in the batter.

5)Preheat oven and bake for about 1 to 1.5 hours at 160°C.

Brunch Scones

Have not been baking for a week as I was away for holidays. Hands started to feel itchy again and so I made some scones for afternoon tea yesterday.
